THE VINEYARD

The vineyard is located 300 meters above sea level in an environment of typically Mediterranean crops.
The soil is calcareous and has a silty loam texture, on the Penedès loams.
These elements of the terroir make the grapes obtained produce aromatic, fresh and structured wines.

VINTAGE

We harvested manually on the morning of September 2, 2020, a day resulting from the biodynamic calendar. We have done it in 20 kg boxes to protect the grapes until their immediate arrival at the winery.
We had previously selected the vines, row by row according to the ripening controls and based on the oenological parameters of sugar, acidity, pH and grape tasting.

VINIFICATION

Once the grapes have entered the winery, we have destemmed them and placed them in the vat with their skins and seeds. We have controlled the fermentation at low temperature and have adapted the pumping over to extract the color and tannins that we now find in the Bergonyó i Durall-Musc.
Once the alcoholic fermentation is finished, we have racked the wine without pressing into American oak barrels where it undergoes malolactic fermentation. We have aged in the same barrels for 6 months and once this time has passed we have racked it to a stainless steel vat until bottling. In the bottle it has continued aging and refining until the winter of 2023.
The wine has not been stabilized, clarified or filtered, so it may contain natural sediments. With this careful preparation and with minimal intervention we wanted to maintain the maximum sensory potential of the wine.

TASTING NOTE

It is a clear wine with a high layer. It has a cherry color with garnet tones and has a homogeneous and marked tear.
Very expressive on the nose, in the still glass it shows aromas of forest violets and raspberries, and the presence of notes of chocolate and coffee. When we shake the glass, a wide aromatic range is generated where vanilla and coconut from barrel aging appear as well as touches of black fruit such as currant and ripe plums.
In the mouth it is complex, intense and round, with balanced acidity and good presence of tannins. It maintains the flavors of very ripe black fruit and some soft smoky touches appear. It has a long and persistent finish.

PAIRING

Due to its intensity and body, it harmonizes with traditional cuisine, such as roasts, mushrooms and long-cooked and oven-cooked dishes.
Very good accompaniment to cheese and sausage boards.
Excellent with pure cocoa chocolate, where the black fruit intensifies and the smoky touches persist.
